Gluten Free Mini Egg Cookies Recipe…

One thing that my girls and I love to do, is baking. A favourite is baking cookies and they love enjoying their cookies with a milkshake. The perfect treat snack.

I also love to make biscuits when I have friends over and I have a few friends who are gluten free. I’ve always worried about making gluten free biscuits or cakes, in case I get it wrong. I thought that with Easter coming up and the hope that we can meet up with people outside, we could bake cookies for everyone.

I decided to test the recipe on my own family and lets just say, they were a big hit and no one knew they were gluten free. I thought I would share the recipe with you, as they are great to make this Easter.

Ingredients

  • 100g light brown sugar
  • 100g caster sugar
  • 120g margarine (melted)
  • 1 egg
  • 300g gluten free plain flour
  • 160g mini eggs

Method

  • Place the mini eggs in a zip lock bag and with a rolling pin, bash them into chunky pieces.
  • Mix together the caster sugar and light brown sugar, with the melted margarine in a large bowl.
  • Add the egg and continue to mix with a wooden spoon.
  • Add the flour and mix until its all combined. It can be hard work to combine it, but for the perfect cookie dough its definitely best to do it by hand.
  • Add the crushed mini eggs and spread them evenly.
  • Either cover the mixing bowl with clingfilm, or wrap the cooke dough in clingfilm and chill in the fridge for 45 minutes. You can leave it in fridge until you need it.
  • Heat the oven to 170C and place baking paper onto a couple of baking trays.
  • Remove the cookie dough from the fridge and roll the dough into balls. You want them to be about the size of golf balls and place them on the baking tray. Leave a gap between them, because they will spread.
  • Put them in the oven for 15 minutes. They will flatten and turn a lovely golden colour.
  • Remove them from the oven and leave them to cool on the baking tray, before moving them.
